Moroccan Crusted Beef Filet, Steamed Brocolli, Roast Garlic Sweet Potatoes

2 (4-ounce) beef filets
8 ounces broccoli florets
2 medium sweet potatoes
1 Tablespoon fresh rosemary - chopped
1 garlic clove - minced

Moroccan spice:
1 Tablespoon ground cumin
1 Tablespoon ground coriander
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 Tablespoon paprika
1 teaspoon ground tumeric
1 teaspoon ground ginger
1 Tablespoon brown sugar
2 Tablespoon salt
2 Tablespoon ground black pepper

To make the spice simply grind all the ingredients together in a clean coffee grinder and toast in a dry, hot skillet until the fragrances are released. Do not burn. Most retail stores sell a variety of ready made spice mixes so don't be over-whelmed thinking you have to use the Moroccan spice mix for this recipe. Use whatever you prefer and remember to clean your coffee grinder very well.

Pre-heat oven to 375 degrees. Cut sweet potatoes into 1/8 slices and toss with olive oil, rosemary and garlic. Roast approximately 15 minutes or until tender.

Coat the beef filets with your chosen spice mix and sear in a hot oiled pan. Cook to desired temperature (medium rare, 8-10 minutes; medium, 10-12 minutes; well done, 12-15 minutes). When ready, serve with portion of potatoes and cooked broccoli. Quick, easy and nutritious
